I have a job ready to go in Mississippi. Do I need to take that region’s humidity into account when specifying the veneer adhesive?

Absolutely. You want to use a resin-based, water-solvent adhesive, which has a relatively long tack time. This type of adhesive is usually used when it looks as though it will take a long time to align the veneer. These adhesives also contain a slight amount of moisture that tends to help flatten wavy, dry veneers.
